Blissey’s most important stat: HP, A, or D?
Which stat (HP, Attack, or Defense) is the most important when choosing a Blissey to max out? When fighting against a Blissey with Machamp, which stat results in the most difficult battle for the Machamp? Thank you very much!

For gym defense I would almost argue HP is more important. Having the extra HP could stall an attacker for another second or two. It doesn't sound like much, but if this link is true the defender's HP is doubled while placed in a gym. A 10 point difference in HP IV could mean an extra 20 points of HP on defense:

Bulk matters the most. The attack stat makes relatively little difference because of breakpoints, although it matters the most if you want to reach high CP, especially with Blissey.
Hp is the most important as maxed Machamps will deal the same damage to your full motivation Blissey regardless of def IV, again because of breakpoints. But higher def IV means your Blissey will decay down below breakpoints a little bit slower.
Hp>def>atk is how I've chosen my 6 maxed Blisseys.
A>D>>>>HP.
Whoever says hp is dead wrong. If you don't believe me, go to pokeassistant and do the simulations yourself.
EDIT: I will just add that housunkannatin makes a good case for choosing hp over def because of breakpoints. However, you need to consider whether in your area there are a lot of attackers with maxed out Machamps and take into account the fact that breakpoints change as motivation decreases.
EDIT2: While housunkannatin is right that there's no breakpoint for lvl 40 Blissey between 10 and 15 def vs lvl 40 15a Machamp, my simulations show that vs such Machamp 10 vs 15 hp makes no difference either. Probably better to just go for def, given how much more bulk it gives in other cases.
