Eevee Step Question

For the evolving eevee to espeon and getting the 10km for candy one, Im not on that yet, but I only need to hatch one more egg, and its about 1.6 km from hatching. So im wondering if I start walking now, and when I get to the 10k on the eevee, will the 1.6 km walked before getting to that step count?

No, it won't. I tried it and when I reached that part I had to start from scratch.

I had 3km walked with the first and 4,5km with the second when I started their steps, didn't have to start from scratch. Are we playing the same game?

Only need to finish walking the two 5km chunks and obtain two buddy candy from Eevee while on that step.

You have to start walking it from the moment that step starts.
I did, however, evolve a previously walked Eevee into Espeon and evolved the newly-walked one into an Umbreon later that night. It saved me the hassle of having to wait another whole day to finish that step.

You can start walking before you reach that step, as long as you obtain two candy while on that step.

The walk eevee quest doesn't actually track distance, it tracks getting the candy drops. I started walking both Eevees before I was in those steps and completed them no problem. As long as you get to that step before your first candy drops, you're good.
