Eeveelution help

I can evolve my first Eevee, I want to evolve it into one of the Kanto ones, since I'm working on getting the kanto gold medal. What do you recommend I evolve it into?

Are you, or do you plan to, do any Legendary raids? If so, I'd pick Flareon. Immediately useful against Regice, and also against Articuno (for the upcoming eponymous raid day), then Registeel whenever that hits.

Whatever you choose, neither are a bad option as they all have their uses. I assume you also know about the renaming trick:-
Pyro - Flareon
Sparky - Jolteon
Rainer - Vaporeon

Eevees are always good back up choices. I still use Flareon, Espeon, and Jolteon frequently; Flareon has more raiding use for legendaries...but Jolteon clears gyms a bit better in my meta.

Note: the nickname easter egg to force an evolution is only usable once per evolution. Unless you are desperate for a particular type attacker, it is probably worth saving the nicknames for really good IV and/or really high level Eevees. It is only 25 candy to evolve Eevee so you can just randomly roll any really high level Eevee and see what you get.

Vaporeon is a solid choice for your first of the three. Kyogre and Gyarados are stronger water 'mon, but Vaporeon is strong in its own right, and Eevee candy are easy to accrue. You really can't go "wrong" with any of the three, honestly.

I agree vaporeon's the most useful at the moment and will still be relevant for the future, good bulk and passable offense against top tier legendaries, not to mention use against tyranitar/houndoom/Rhydon/Golem and the eventual return of piloswine
