How difficult are the new tier 3 raid bosses?
Welcome back, Alakazam, even though my team is nowhere near good enough for you (I was almost ready for Omastar when it left). Among the new tier 3 raid bosses, I would be most interested in Aerodactyl due to its rarity (as the hatch that completed my Gen 1 regional dex in the pre-legendary era).

To sum up viable counters by DPS (including ones at barely below 180s TTW that can be fillers):
Any weather
L40 Kyogre
L40 SC Gengar
Clear
L35 Exeggutor, Sceptile, Groudon
L40 Cacturne, Shiftry, Victreebel, Venusaur
Rainy
L25 Kyogre
L30 Gyarados
L35 Sharpedo, Pinsir
L40 Scizor
Windy
L40 Rayquaza, Mewtwo
Snow
L40 Jynx
Fog
L30 Gengar, Mewtwo, Tyranitar
L35 Houndoom, Absol, Banette
L40 Banette, Sharpedo
Weatherboost gives a lot of viable counters but the simple and resource-intensive answer is to get 2 maxed Kyogres.
Slowbro: Relatively challenging for a tier 2 I guess. Decent defense and Confusion hits hard.
Aerodactyl: Easy. Lots of viable counters at level 30, including Vaporeon and Jolteon. Looks like it can be soloed with one maxed Kyogre without rejoining.
Claydol: Hard as discussed above.
Starmie: Moderate. Some level 30 viable counters, including Exeggutor and Sceptile. Getting the wrong hidden power type can be troublesome for a glassy team, but after Kyogre month I'd expect most players to be able to handle it without breaking a sweat.
It's not just to solo a level 3 boss. Assuming you're talking of Claydol, a second maxed Kyogre, maxed Mewtwo, maxed Tyranitar etc are all unlikely to be bad investments in the long run. In fact they're some of the best investments in the game, so if you wouldn't mind soloing Claydol, putting stardust into those mons is a very good way to use it.
That's a valid point, but I don't max more than one of any legendary (or any Pokemon with the same move set)--it's just not the kind of trainer I am--so that scenario is out for me. It would have to be a team of uniques, and it's possible that could work, though without a weather boost, it would be close.
The problem is, those who has the resources or proper counters to make Claydol an trivial boss don’t usually want to do it. Those without the counters or resources want to do it but think it’s hard.
I got a pair of max kyogre several max egg and sceptile. But there’s simply no reason for me to do it.
