Espeon only Machamp solo?
Its been partly cloudy in my area for days now and I'm acquiring several low IV level 30+ eevees. So is it worth turning them all into espeons? Can machamp be soloed with a team of just espeons?

You can but you have to dodge alot.
Using only 3-4 Glass cannons and tankier pokemon afterwards is the more easy approach, because you don't need to worry about dodging so much.
Before I got Mewtwo i used
3x Espeon (confusion/futuresight)
1x Dragonite (DragonTail/Hurricane)
1x Exeggutor
1x Lugia lvl 20
With that setup i got only a few seconds left depending on machamps moveset.
With Mewtwo i Still use the 3 Espeons and Dragonite and don't need the 6th slot anymore and have about 50 seconds left :D
I just so happened to do my first solo T3 raid today, against Machamp.
I didn't really go out of my way (read: catch and level up specific monster for this specific battle), and mostly used what I already had caught.
My team:
Espeon 100% LV 40 C/FS
Espeon 89% LV 39 C/FS
Alakazam 96% LV 39 C/FS
Mewtwo 96% LV 39 (Cause nice round 3900CP) C/SB
Gardevoir 98% LV 39.5 C/DG
Exeggutor 98% LV 40 E/SB
Battle went all the way to Exeggutor, and was left with about 50 seconds on the clock, weather booster Machamp too.
I don't know about just Espeons, you're likely to have other relevant pokemon to fight Machamp with. If all you're going to do is evolve them to try it out, sure? No Stardust cost.
I didn't dodge too often either, but I had some tankier Mon with me. Remember that you'll get energy for your charge move even when you get hit as well, the trade off for being able to maintain high DPS is that they'll be fainting often. If just Espeon, you'll need two battle parties for quick a switch. I think you should be able to do it fine.
It can def be done and is quite easy depending on your play style. A team of 6 was my squad for the longest time for this tier 3 boss. The biggest complaint is how fragile they can be. Depending on how well you dodge or can judge when a charge move is coming is also very important. I think I dodge pretty well, minus the annoying "hey we're gonna give you the damage anyway" crap Niantic does to us and they plow right through Machamps.
So in your case if you powered up/evolved a team of low IV Espeons you shouldn't have a problem at all. I went from a team of 6 all high iv(like96-100), 25xx- 2700 range and haven't powered them up since being able to win every time and that was maybe 2 months after his release. Just aim to get off at least 2 of your charge moves each Espeon and you will destroy the Machamp with like 30 sec left. You may have to power some up a bit but that will be determined thru battle and how much Health your Espeons have after dodging and until they are able to fire off a 2nd Charge move. You may notice a couple power ups get them to survive enough to accomplish their task.
Aim for Eevees above 830 CP. A 100% level 30 eevee is about that, so anything you have better than that should work. Especially with good attack IVs.
4-5 espeon and dragonite/lugia should put you over the top. A good Gardevoir is even better! Don't worry so much about moveset, just try it. Focus on not wasting energy and getting as many charge moves off as you can.
I ifinished a machamp today with 30 seconds left. It would have been 45+ except he kept killing my pokes right after their charge. Lots of wasted energy! A few seconds difference early on can make a huge difference.
What CP were your Espeon and did you dodge? If the Espeons are around lvl30, getting off 2 Future sights a piece should finish similar to me. On weather boosted,usually end raid on 5th Espeon, 6th if I dodge awful or get the phantom damage but never reviving and going back in. It may be move sets, mine are all Confusion/FutureSight.
