How much stardust per day ?

It doesn't matter. This is a game, and it should be fun. You should grind as much dust as is fun for you, no more, no less. That said, I get 6-9 thousand a day, but I call myself serious, but not hard core. I'm also a free player, which makes it harder, as I can't realistically walk 9 incubators at once, or do 6-10 raids a day.

Honestly, 12k - 15k a day is a great amount during non-event time. But once that Dbl Stardust perk drops hit your local park and you grind the fuck out of every poke stop you see DROP ALL LURES HAVE INCENSE UP RUN 9 INCUBATORS AT A TIME AND YOU GO GO GO DON'T YOU STOP TILL YOU HIT A MILLION STARDUST AND YOU KEEP GOING AND GOING LIKE AN ENERGIZER BUNNY ON CRACK AND GO GO GO GO AND GET MORE MORE MORE ANd More more... well honestly if to power up a pokemon from lvl 20 to lvl 39 costs 212,500 stardust than 15k a day will take about 14 days

The thing that works for me are weakly goals, it is 100,000 stardust each weak, calculate that back and on average it is 14,286 stardust per day but during the weekend i am playing much more, so i have more flexibility reaching my goal

I average 15k normally but during double sd I go for 80k a day, current at 2.5 mil and have powered up 30+mons to lvl39+. I would consider myself hardcore.

I get about 12k almost daily since I go to a park full of nests, but today I've gathered over 15k, leveled my Vaporeon 3 times so far, got 583 stardust for the next round (needs 6000 to reach lvl 31). Once that's done, I'm leveling my Machamp.
