Value in a Tank for Mewtwo Raids
The general feeling with raids is more damage is better. However, does Mewtwo's enormous attack Stat and only above average defense change that? I got in to a debate with someone about the value of umbreon against Mewtwo. I kept saying it's damage output is too low, even Espeon can hit harder. What is a clear way to prove the lack of value of an espeon? Just try to estimate damage output over the life of the pokemon in the raid? Maybe ignore charge moves from mewtwo for simplicity? Or am I wrong? Is there raid value I am missing?

No one should do that.
I took it as "using an Espeon because of a slight DPS gain over other optimal mons instead of one with much better survivability and great DPS." (not sure how Umbreon even fits that-he's just not a great option). Not dying in the middle of a charge bar effects overall real world DPS too. It's what makes using Gengar even with the kick ass old moveset so tough for me to do at times.
DPS is king because we are all fighting the timer.
Survivability also matters for high level raids since you can lose your damage balls having to re-enter. Of course a good mix of high DPS and mid damage/survivability mons of ten works best for me there.
MewTwo will be kind of different. His ATT is huge. FWIW, 200 defense isn't bad it's just not what we have been seeing on the latest birds. But that damage is so huge that my best guess is that you will need high HP because not dodging quick moves will result in more dps against you than before. You can capitalize on this by using that produced energy to quick moves especially multi bar ones like Crunch on a Tyranitar.
You can run sims on Pokebattler which will paint a much more clear picture of the differences.
My guess (And I haven't run sims yet because he hasn't been announced) is that Tyranitar is so far and away better than the other options that you can use a mix of any of them to a lesser degree. Although the entire team is in trouble if he has Focus Blast depending on group size of course.
But it is also relative. Let's say you are in a huge group and have 4 high end Tyranitar and want to run an Houndoom. That could go OK depending on moveset. Let's say he has 3 Houndoom and wants to run them instead of other mid level tankier or better resisting mons.
That won't end well or take long to end at all.
Should I add my Ttars, Scizor & Gengar probably gonna be carrying whoever thumbs downed that? ...and Mewtwo will be dead already by the time the fight goes to my 6th slot. And it IS a great choice for a 6th slot, SB hits Snorlax for only 51% damage.
...or is it just gonna be somebody on here always whining about diversity when you plan to use 6 Ttars???

T-Rex with Crunch followed by T-Rex with SE will be the best Mewtwo counters.
It pairs the tankiness of Umbreon with a decent attack stat so it should be always preferred.
Your debate could be on the usefulness of legacy Gengar for Mewtwo raids, because here, while it has a greater damage output than TRex, it is a glass cannon that will break very soon.
Against Focus Blast there will be soon the option to counter Focus Blast Mewtwo with Shadow Ball Mewtwo. which has again a survivability comparable to Umbreon but a much better damage output.
TLDR: the "tank" counter to Mewtwo is Crunch T-Rex but not Umbreon. If Mewtwo has FocusBlast, Shadow Ball Mewtwo becomes another tank counter alternative.
