1) DPS should be PPS (power/sec). It is the average rate at which power is dealt every second.
2) Damage per move is already listed as Power. (actual damage done depends on both attacker and defender).
3) To calculate the maximum total PPS you need to consider the move set, since the energy generated by quick moves sets the time scale of charge move release.
Consider a quick move with 10 DPS and 8 EPS.
Charge move of 2 bars of 90 power with 2.5 second cooldown (duration).
1 cycle is full bar+charge move execution time.
100 E / 8 EPS = 12.5 seconds for a full bar. In that time the quick moves have done 12.5 sec * 10 DPS = 125 Power.
The charge move executions add to the charging time, resulting in a cycle time of 12.5 + 2 * 2.5 seconds = 17.5 seconds. The charge moves did 2 * 90 = 180 Power in that time.
The total power was 125 by quick moves and 180 by charge moves = 305, while the cycle time was 17.5 seconds, resulting in cycle PPS of 17.4.
STAB and Effectiveness can be applied to the total powers, e.g. (125 * 1.2 * 1.0 + 180 * 1.2 * 1.4) / 17.5 = cycle PPS of 25.8
This is not True DPS displayed on this site though, but you can see that just calculating power over move duration does not make much sense anyway.
