About blissey..
I know the moveset really doesnt matter with blissey, but i want to know in pratice, a pound/hyper beam can be a great defender?

It depends who you use as an attacker. I typically use B/SE Tyranitar. Tyranitar is fast enough to hit nearly all charge move dodges and resists everything except DG. This results in being able to get through ~3 Psychic Blisseys in a row, ~2 HB Blisseys in a row, or 1 DG Blissey with a good chunk of health left. All matches take about the same time. So in this case HB falls somewhere in the middle, easier than DG, but tougher than Psychic.
For comparison, I can get through ~4 ZH/BS Snorlaxes in a row, with each match being much faster than Blissey (HS is toughest mactchup for Tyranitar). So for me the ranking from toughest to easiest would be:
DG Blissey > HB Blissey > Psychic Blissey > BS Snorlax
I use a more varied lineup for prestiging. My most common prestiger is Exeggutor. Exeggutor resists Pyschic, so again Psychic is easiest, DG is toughest, and HB falls in the middle.
However, when prestiging against a P/HB Blissey, I'd choose Machamp. P/HB is the only combination for which neither Blissey attack is SE against Machamp. And HB provides a lot of warning, making it easy to dodge with Machamp's slower moves. Machamp can get stuck in the dodge/revive bug, if you dodge HB with less than ~half health remaining. Nevertheless, I'd consider P/HB the easiest moveset for a Machamp attacker.
Still better than a ZH/BS snorlax. In fact, a level 30 blissey with that moveset and IVs of 75% is better than a maxed out 100% IV level 40 snorlax with ZH/BS as a defender. I ran two simulations on pokebattler using a heracross with C/CC as the attacker.
Against the level 40 perfect snorlax it takes 38 seconds.

Against P/HB level 30, 75% blissey it takes 62 seconds.

That's right, a blissey 10 levels lower with average IVs and its "worst" moveset is still better than the next best defender with its best moveset and perfect IVs.
Actually, by dodging only specials you lose 20 more hp and save just 2 seconds:

No, you don't. The sim I linked below shows 50.9 seconds and 1.4 Blisseys in row. The earlier for dodging all shows 61.9 seconds and 1.3 Blisseys in row. 61.9 - 50.9 is a difference of 11 seconds -- huge.
You are getting different results be you clicked dodge specials, not dodge specials pro --- that is you wait until the HB to use a CC, so you are using few CC attacks. This strategy only works well, if the defender has frequent charge attacks, so you can use your charge moves soon after they are available. For example, it would work well against a BS Snorlax.

The sim you linked has a dodge strategy hardly anyboyd would use. I'd expect typically attackers to use the first CC as soon as it is charged up ("dodge specials pro"), not wait until the first HB to use their CC which has been charged and waiting for some time (the "'dodge specials" that you simulated)

I have 2 P/HB Blisseys sitting at 2985 and 3005CP respectively. Don't regret powering them up at all. Would I like them to have DG? Of course but they also double as unreal attackers when they aren't in gyms.
It still takes them a long time to take down a 3000CP Blissey and if they don't dodge the HB or get the bug it can be a real PITA for them.
I don't for a second regret powering them up to 3000CP and I would do it again in a heart beat.
