What would you evolve your 100% iv eevee into?
I have used the gen 1 name tricks but not gen 2. Should I roll the dice? Or should I get my first espeon or umbreon. Put in order of who you would want if you did have all of the name tricks available, and let me know what you would do in my situation.

IV is most important for defenders. None of the Eeveelutions have a high enough CP to do well in gym positioning, but Vaporeon could be used as a defender in less competitive gym metas.
IV is also relevant for attackers. The most useful attacker depends on your local meta and alternative mons. For example, if your gym meta is full of Rhydons, you'll likely want a good Vaporeon, although some prefer alternatives like Exeguttor. And if your local gym meta is full of Gyarados, you'll likely want a good Jolteon, although some prefer alternatives like Blissey or Tyranitar. Flareon and Espeon also can be useful, but generally have fewer best use cases due to their typing. For example, the main thing I use Flareon for is prestiging DG Blisseys. That's an important use, but doesn't occur that often, and 100% IV isn't ideal for prestiging. Umbreon is great prestiger, but, not a good attacker.
If it were me, I'd hold off until the gym rework. If I was going to evolve now, I'd hope for a Vaporeon, as it's the only thing I'd bother investing the dust to power up from level 20 (assuming hatch), if I get a good moveset.
For me, Vape w/ Water Pulse and Jolt w/ TS/Thunder.

Wish I'd known about future evolutions when I evolved a few of these. Plus, Eevees used to be SUPER common in my area for about 5-6 months, and they're really not anymore.
Save. Pretty much the only potential risk you take is that Espeon no longer has Confusion. I'd suggest it's just as likely that Confusion gets nerfed, though.
I'm assuming by now, you've got plenty of each and almost every moveset from first three at this point. Unless you're set on using Espeon as an attacker, I'd recommending saving it.
