Personally I would power up the L/BS because it's legacy, so there's no waiting for a better one. If it becomes a bad defender in the future I could use it on attack.
But I would wait on the other 78 candies because it seems like a gym rework is coming.
We don't know how this will change the game, but as an example, maybe you don't need as many defenders in the future, so maybe 4 level 30 Snorlax isn't as useful as having 2 level 35 Snorlax. If it turns out that nothing really changes, then you can still power them up, but I would wait to be sure, since it looks like you have enough strong defenders that not having an extra Snorlax sitting in gyms isn't a big deal for you.
