It reflects what was caught after they added male/female icons.
Every mon prior to the icon was allocated a male/female gender, but these older mons are not displayed in the dex.
It would be cool if feeding a candy to a mon that is not in your dex, but is in your collection would result in the dex field being populated.
...but it doesn't.
