I am looking for:
Wild Lapras. They seem to be ultra rare here so I'm not so much looking as crossing my fingers and hoping. There are not a ton of pure water spawns here and the chances of hitting one are not huge like some areas but I have hit on one so they are here.
Omanyte- Typically hard to find here. Very rare water spawn. But they are pretty common during this event. I do not have a legacy moveset one to power up though so I'm just piling up all that I can and seeing what I end up with after the event ends.
Totodile- They are marginally more common right now here. I'm hoping to hit on one with good IVs while piling candy up.
Magikarp-Dropping pinaps on these to try and build up as much candy as possible. I'm not really sure why though since I probably won't power up another one unless it is a shiny as a trophy.
Side note: Anyone hunting in an area that spawns regular Larvitar? I am heading to our place on the coast today for the first time since gen2 dropped. That area is a great hunting area for them in normal times (and lots of other rares) and I'm wondering if the event changed that. It isn't too rare to find Dragonites there or Laprases so I'm hoping that at least the Lapras chances will make it possible for me to hit on a few of them even if my chances for a Larvitar or his evolutions were lost.
I'm pinapping Magikarps and hoarding candies for future Gyaradoses and hoping, obviously, that one of them would be shiny :))

First day of event - wild Lapras appears in my house!!! And... it's 84,4% IVs which is damn good for a wild catch. I was so thrilled :) Hoping to encounter some more to collect more Lapras candy.
The only wild Lapras I encountered so far ran from me.
I am hunting Totodile (not as common as I hoped, may need to travel a bit) and then just MagiKarp fishing which are plentiful...I have something that I want to feed up just because I can.
Also collecting Chinchou whenever possible for a small Lanturn army if I can get enough.
Seels!
Never seen one and only hatched a couple.
I even walked one for some time to get the entry for Dewgong.
With this event Seels are everywhere and I'm stocking candies because I know that I'll never see them again around here.
Other than that... a shiny would be great. Or maybe a Gyarados with double dragon attacks to eat some nites or even a DT/HP or C/HP, since I still don't have a Gyarados with HP after 5 tries (3 before the event, 2 on the last couple days while farming karps).
Lapras aren't everywhere, but there are still a lot in my city. I've seen 3 so far, after never having seen a wild one before the event.
Don't use Pinap on magikarps- you should have all the Karp you need when you get to the coast.
Larvitar - sounds like their spawn rate is pretty similar right now, which for my area is very rare.
Dratini - much less common right now. They are not water types, and I think water types have taken the spawn points usually frequented by Dratini.
I'm spending my Pinaps on Magikarp and hoping for a shiny, of course. I just evolved a Politoed (stupid move set... Mud Shot / Blizzard) for the Dex entry, but I'm hoping to get another decent fighting Poliwrath too. I also want an all-electric Lanturn, for prestiging the inevitable swarms of Gyarados that we're going to start seeing in gyms.
A WG/HP Golduck or Starmie would also be welcome for prestiging.
Are there any water types with additional evolutions in future gens? It would be a good idea to save candies for them, but I can't think of any.
I have a few Lapras' now (hatched one the day before the event, would you believe) so I'm not too concerned with them. My main aims are Karp candy and Totodiles.
I'd like to get enough candy for another Gary, with some extra to do some powering up. If I could get a shiny that would be wonderful, but I'm already envisioning a scenario where I get a low level, low IV shiny Karp, and am caught between wanting a red Gary and a good Gary!
On the Toto front I'm hoping to begin stockpiling candy for it, and hopefully find one worth evolving. I still haven't seen one, but incredibly stumbled upon a Croconaw today. It was 1198 CP and I decided to be a daring badass/fool and Pinap it. Caught it first time with a 'great' curved ultra, so that's 10 in the bank... :)
