Someone has asked for perfect matchups with double resistance and double weakness. It came to my mind if the defender was an charizard with Double fire moveset and the attacker an omastar with rockslide and rockthrow (both legacy), omastar would be the perfect counter.

Also, I think scizor with double bug moveset vs exeggutor with grass attacks works.

Parasect with double bug against eggy works too. Resists both grass and psychic.

Bug doesn't resist Psychic. But Parasect does double resist all of Eggy's grass attacks.

A more dominant match-up would be a defender without STAB
