espon or umperon as attacker for opposing gyms ?

the gyms around me have vaps , gyardos , dragonite , snorlax and blessy ( all in the range of 2500 to 3000 ) will espon or umperon be any good against any of these ? and what would be the recommended CP

Espeon might be good as a neutral backup attacker in case one of your others faints, since it isn't resisted by any of these, if you don't have an attacking dragonite. A level 30 one will be fine. It seems umbreon is mostly just good for prestiging because of its low stats.

would you suggest i use the name trick now or wait until i am higher level ? i am level 26 and i didnt use the name trick yet as i didnt have much evee candy till recently

I think using the name trick is fine, since you still have a guaranteed way to get espeons after that (walk 10 km. with one and evolve it while it's your buddy). What kind of IVs and CPs do your best eevees have?

If you end up with a defensive moveset on your espeon, you can use it as a defender instead.

I used the name trick for umbreon on a level 22 eevee with 82% IVs, and it evolved with 1247 CP. This is a good CP for a prestiger here.

not much use for a prestiger around here , and i have to check what kind of IVs i have , 2 only is decent enough , i am thinking of just evolving and leave it to the chance , as i dont have any of the evee evolution yet

Okay, sounds good. If you leave it to chance you will definitely get a gen 1 eevelution, but if you don't have any of those now you could use those.

Espeon and Umbreon are not particularly useful against the mons you mention.

A high-level Espeon might have a role as a kamikaze attacker into Blissey - will resist some of her attacks and can hit for some good damage. Umbreon should be the best counter to Espeon, I'm starting to see a decent number of those in gyms in the 2500+ range. For the name trick, I'm personally holding out for a 96%+ for Espeon (since could be a defender if doesn't get desirable attack moveset), and not sure what CP range I want for my Umbreon, probably 1200-1500, and IV won't matter there (although I like my prestigers to have 15 stamina)

Espeon doesn't counter anything, but is rarely resisted. It is a good pokemon if you need something to take on multiple pokemon of different types. Umbreon is only good against psychic types (but very good against them.) He is a good counter to Espeons (which you should start seeing in gyms at that cp range) and Exeggutors. He is a good option if the gym has multiple psychic attackers. My Espeon is around 2400 cp, my Umbreon around 1800 cp. Both worth fine, tho I would like to level up my Espeon a bit more.

Earlier I used to see lots of exaggutors , but not recently , I think people prefer to put their highest cp for better placement and I saw no exponentially so far
