Breeding in original Pokémon games

Can someone who actually plays/played regular Pokémon games help to explain breeding mechanics in those games?

How are IVs determined? How are movesets determined? If I breed two Dragonites, does it result in a Dragonite, Dragonair or Dratini? Always the most basic form will be born? Can you breed from two diff evolutions? Raichu breed with Pikachu? Can the same pair of Pokemons breed more than once? If Snorlax A(male) has already breed with Snorlax B(female), can A breed with another Snorlax C(female)? Multiple partners or is it one and done?

Ok.

1 - It's very complex, but the baby inherit from their parents theirs IV, some items help.
2 - Very complex again, some moves can be inherit, and some just comes with the baby
3 - Always basic form.
4 - yes, even diferent species, there's a list of it.
5 - yes.

It's a very complicated process, you can read about it here:

A very simplified rundown:
1. IV's are random (6 IV's ranging from 0 to 31), but can be passed down from parents if certain items are held (up to 5 can be passed down in total).
2. Moves can be passed if the male parent knows the move (from leveling up or TM) and the offspring can learn it by leveling up or as an egg move (special moves that can only be learn by breeding).
3. You get a Dratini, for most pokemon you get the first evolution, The Nido(king/Queen) gamily is an exception, and the pokemon that have baby forms (Pichu, Clefa, etc) are exceptions, you need a certain item to get a baby, if you don't have it, you get the next step evolution (Ex. pikachu instead of pichu).
4. Yes, you can even breed different pokemon, as long as the 2 are in the same egg group
5. Yes as many times as you need.
6. Yes, they are very promiscuous, they can even breed with their own offspring (Gross...)

Bonus: There are some pokemon that have no gender, and can only breen with Ditto, Ditto can breed with any pokemon that can breed, regardless of the gender, and there are some pokemon (legendaries mostly) that cannot breed even with Ditto.

As I said, it's a very deep topic, I didn't cover natures and abilities, but that's another aspect that requires a long explanation.

Yes, you can get as many pokemon of any given species as you want, as long as you have one of them of each gender, or one and a ditto.

Is there some drawbacks? Because if that so easy nobody will spend so much money on incubators.

They'll probably implement a rare item we'll have to use beforehand, something like Razz Berries maybe that we'll have to give to the Pokémon we're breeding

Or only one egg at a time, waiting for a slot avaible in the usual 9. Incubators would be still needed.

Well... not so much drawbacks, but there are requirements, for example, you have to leave both parents in the Daycare/Nursery to get an egg, so you can't use them, then you have to walk with the egg for it to hatch, so you need to use at least one spot in your party, so now you have only 5 available pokemon for battle, and you have to walk a certain number of steps for them to hatch. In Pokemon go this translates as... you'd probably have to leave both parents in a gym/pokestop/ or use a special item for them to breed, then you'd need an available slot in your egg inventory AND you'd still need to incubate the egg. The advantage would be that you know that you'll get the pokemon you wanted.

Exactly this advantage, some people spend tons of money on incubators just to have snorlax in 1 in few hundreds hatches, so it do not looks like a problem to leave them alone for a day or even week and then hatch only single egg.
