Of the currently available Pokémon in the game, Dragonite (Dragon Breath/Dragon Claw) is the best attacker against Snorlax.

Here's the top list (only listed top 5 Pokémon and their best moveset even though technically Dragonites with less effective movesets are still better than let's say Lapras):

  1. Dragonite (Dragon Breath/Dragon Claw)
  2. Snorlax (Zen Headbutt/Hyper Beam)
  3. Lapras (Frost Breath/Blizzard)
  4. Vaporeon (Water Gun/Hydro Pump)
  5. Arcanine (Fire Fang/Fire Blast).

I agree with Zureiyaa. Moreover Snorlax is a beast 'cause it can't be 'countered', there are no supereffective matchups with it. Due to its monstre tankiness you have to rely on both raw DPS output and effective dodging. Sadly fighting type moves and pokemons are not strong enough to overcome this tankiness. Luckly Snorlax is not a monstre in its damage output as a defender (oh, yes, dogde those nasty charge moves!). If you face a sub-optimal lick Snorlax another Snorlax with Zen Headbutt will counter it effectively due to ghost resistance. Wigglytuff with pound and hyperbeam will take down a double its CP Snorlax as well (excellent for training!).

A Zen Headbutt/Solar beam Exeggutor will do fine against a zen headbutt Snorlax. Exegg will resist psychic, is quite tanky and have an excellent damage output.
With proper dodging other weaker water attackers are able to take down a +40%-their-CP Snorlax (with optimal attack set): Starmie, Slowbro (both psychic resistant) and Golduck

It's true that Fighting type has type advantage over Normal Pokémon, but the problem is that Machamp (strongest fighting type Pokémon) is really weak. There are dozen Pokémon that are still better than Machamp. And if you know what moveset the defending Snorlax has you can choose your attacking Pokémon based on that, just like R_canine said.

The problem is there is no balance to this game. There is no actual meta game. There's not a single fighting type that anybody really uses. This is the same for many types. When they finally come out with trainer battles its going to be a huge letdown if they don't balance the game more.

Going back to the original question. I smack Snorlax with Wigglytuff. Wiggles is Tanky and like the site says. Basically a mini Snorlax.

The same has to be told about electric, bug, steel and ghost types, useless as for now

I like to use a Poliwrath with submission or a Machamp with cross chop/submission. Dragonites are good if your looking to win but if your looking to gain prestige you wanna use pokemon that have a lower CP than what your attacking.
