Which biome do you live in?
One of the best parts of this game, in my opinion, is that your experience depends on where you live, where you go and which parts of the world you travel to.
My city in Italy is apparently a Grass biome. The most common pokemon here - besides the obvious ones and the bugs - is definitely Eevee, and I find loads of Exeggcute, Oddish, Bellsprout, even Tangela and Bulbasaur are pretty usual. For some reason a few Water types (Staryu, Goldeen, Poliwag, Krabby) are super common too, while others (Psyduck, Slowpoke, Magikarp, Tentacool) are quite rare. However Fire, Ground and Electric types are almost unfindable...
What are the common pokemon and types in your area? Asking out of pure curiosity.

Spain - In a city near Barcelona
After pidgey, rattata, weedle and eevee (this 4 ones are like 90% of my spawns) the more commons to me are Mr Mime, Poliwag, Krabby, Goldeen, Staryu, Bellsprout, Oddish, Clefairy and Bulbasaur.
Hardest to find are fire types (charmander is the most difficult) and electric ones too.
And of course the epic rare to me are Dratini and its evolutions, Snorlax (saw it like 4 times in 5 months playing) and Lapras (never seen it in the wild)
Totally depend on updates, but always eevee, Pidgey and zubat, rattata is not that common, same as magikarp, growlithe and psyduck. At the 0.47.1 update, Mankey appears the most.
0.49.1, not correct, but close to correct:

Tentacool encounter: 0%.
Psyduck encounter: 0%.

Believe it or not, the rest is rare for me. Rotterdam is also known as Pokemon heaven within the GO community...
You are right on Slowpoke, forgot about that one. Drowzee and Ghastly I used to see more in the past. They became less apparent after the Halloween event.
I don't see eevee that much either, but it is on the radar now and then. I think we both have the same biome, lucky us. It's probably the worst you can get
It's strange, I live in Philadelphia in the US and I pretty much have the same distribution as you lorma. The only others a get a lot of too are Paras, Pinsir, Tauros, the Nidoran's, and to a slightly lesser extent Squirtle. Charmanders are almost impossible to find without a nest and Dratini just as hard.
I'm in North Carolina in the USA. If you add in occationally finding Jigglypuff and Clefairy, it sounds like I'm in the exact same biome as you.
On the plus side, there's a small water biome near where I work so I can pop over there for half an hour and find a decent amount of Magikarps, the occational Psyduck, and hopefully some Dratini.
In Brasília - Brazil
Very common: Eevee, Bulbasaur, Exeggcute, Bellsprout, Goldeen, Nidoran, Staryu, Clefairy, Pinsir, Tangela, Dodrio (dodrios here are more common than doduos, don't really know the logic behind this lol).
VERY hard to find: Lapras, Chansey, Shellder, Kabuto, Charmander, Machop, Pikachu, Diglett, Magnemite, Voltorb, Dratini, Grimer, Electabuzz, Seel
Mexican rural town in the mountains zone, 100 km away from the ocean, 1km altitude:
Too much: growlithe, ekans, mankey, meowth, sandshrew, paras, eevee, geodude, rhyhorn, nidorans.
Eventually: hitmonchan, hitmonlee, chansey, onix, abra, clefairy, doduo, diglett, zubat, cubone.
Mexican city in the valley 40 km away from the ocean, 1km altitude
Too much: pidgey, rattata, zubat, odish, paras, venonat, weedle, caterpie, bulbasaur, eevee, cleafairy, nidorans, poliwag, staryu, kraby, bellsprout, goldeen
Eventually: exeggute, kabuto, psyduck, magikarp, abra, slowpoke, gastly, jynx
SW Missouri, United States. The biome you describe in the OP sounds quite a lot like mine.
But for living in a small town I can't complain about the diversity of spawns here. I've seen everything here at least once, with the exceptions of Lapras and Porygon, and I've hatched 2 Porygon so I only lack Lapras to complete my 'dex.
Fire types are quite rare here, though. I had little hope for an Arcanine before the buddy option debuted. I have 4 of them now, and I had to walk for every one.
Also had to walk quite a distance for my first Charizard. A few days ago, a park in my town became a highly-active Charmander nest, so I've been spending as much time there as I'm able, cuz I know it won't last. With the nest, I've been able to power up my original Charizard to level 30 and evolve 2 more.

Uncommon spawns (1-2/10):
Mr. Mime, Oddish, Staryu, Gastly, Rhyhorn, Magikarp, Bellsprout, Meowth, Geodude, Magnemite, Weedle, Caterpie, Poliwag, Psyduck, Seel, Cubone, Eevee.
Rare spawns (>1/100):
Squirtle, Jigglypuff, Vulpix, Slowpoke, Abra, Mankey, Machop.
Very rare spawns (>1/1000):
Exeggcute, Dratini, Growlithe, Ponyta, Koffing, Grimer, Sandshrew, Diglett.
Impossible to find outside of nests/eggs:
Everything else.
Sharjah, United Arab Emirates (UAE) - desert biome
Everywhere (mostly ground and rock pokemon) - sandshrew, cubone, geodude, and rhyhorn.
Believe it or not we get few pidgey and ratata.
Instead we have a lot of ekans (that explains the shortage of birds and rats).
Growlithe and ponyta are very common here.
Near bodies of water - we get a ton of water types like magikarp, goldeen, krabby, horsea, tentacool, poliwag, and psyduck. Not so common are shellder, seal, slowpoke, and staryu.
Most of the ditto i've caught were disguised as magikarp.
I've heard some of these pokemon are rare for you guys but here omastar and kabuto regularly spawn near bodies of water. And aerodactyl is often found. Maybe the reason of the presence of fossil pokemon is that UAE has fossil fuels.
Around residential areas and parks - fighting types, machop and mankey are common.
Doduo is a very common flying type and meowth is a fairly common normal type.
Electric pokemon often found near beaches - voltorb and magnemite
Common pokemon here that are from 10k eggs - pinsir, magmar, aerodactyl, and onix.
Most common types - ground, rock, and fire types.
Common starters - charmander and squirtle, i rarely see bulbasaur (dont have a venusaur yet, im lvl 29).
Rare - grass and bug type and the rest not mentioned. I rarely get to see caterpie, weedle, parasect, venonat in the wild.
Only a few parks have grass, bug, and poison type pokemon.
grass biome it seems, but I don't get the rarer stuff like exeggcute, tangela or bulbasaur. theres also a water biome too so there's a few water pokemon, standard stuff, poliwag, staryu, karps, psyduck, sometimes dratinis/dragonairs. hardly see slowpokes or tentacools though.
abras are somewhat common during night time for me. I'm not sure if there's increased clefairy spawns in a certain area of my town or not, or if it's just the overall increased spawns in general making them more likely.
I don't see any fire pokemon at all. rock/ground is rare, electrics for me are only magnemite, and they're also rare.
