Personally I really like Parasect. Easy to obtain, if you evolve a Paras around 600 CP it will be around 1300 CP, prefect level for prestiging. Those with Solar Beam are great vs. Vaporeon, also Rhydon and many other gym pokemon. X-Scissor is great against Exeggutor or Psychics. I have an army of 20 Parasects that I use solely for gym prestiging.
I also have several CP 1300 Vaporeon with HP for pokemon weak to water, a buddy says he uses Starmies for this.

Umbreon seemed like a nice choice for me the last day I guess because of his low CP compared to Vamporeons etc that are usually on gyms I was surprised the gym prestige went way up chossing Umbreon as the first pokemon.
Edit: also it works quite nice against Exeguttors that are another cummon deffender around.
I love Parasect too, don't have that big of an army of them because it is don't needed, but I have 6 with different moveset on the range of 1k-1.3k CP.
Other mon I use quite a lot when prestiging are Umbreon, Tangela and second stage of starters evolutions, Ivysaur, Wartortle and Charmeleon, and when I can I will use for sure second stage evolutions of gen2 starters too (even 3rd stages if they are in a good cp range). I love to use Raichu too and other mons that have low cp and are not strong enough to take down gyms efficiently.
Two that I am really waiting to use are Sneasel and Piloswine, but still don't have them, only have catched 3 swinub since gen2 release.
My favourite is Tangela. She's awesome - all goofy and cute until she starts wiggling and obliterates Vapes with an almighty Solar Beam.
Sudowoodo is also earning my respect as a Snorlax killer - he soaks up all the Body Slams and Hyber Beams and has 4 great movesets available. He can beat Snorlax with twice his CP for me, while still looking hilarious.
Honorable mentions for Wigglytuff, Blastoise, Pidgeot, Electrode, Tentacruel, Raticate, Parasect, Golduck, Kabutops, Ninetales, Sandslash, Hitmontop, Lanturn and Noctowl.
For a while, while I lacked revives, I used every garbage smaller than half cp of first defender. Minor position adjustments from the 12 I saw on the screen and go to fight. No quick move dodge, maybe for easy to dodge charge moves. Kill 3, maybe 4 defenders. Except blissey and BS Snorlax. If blissey, than a serious team, if BS Snirlax, 3-4 pokes or drop before him :)
Repeat until all dead or done enough prestige. Even with 800 cp crap (6 of them) I was able to kill 2 2600-2700 pokemons.
Than transfer all. I rename all crap with @ after an ideea read here.
I kind of started to like, intresting to see a lot of new moves.
Now I have aroun 120 crap from 800 to 1600, just need to find time for prestiging.
I also have good variants of them, i.e Parasec is crap only with poison move.
Anyway, I need to enlarge the crap list since I will soon run out of space.
Meanwhile I have again 80+ revives, all usefull prestigers ( houndreds of them, 20 paras, 20 wiggly, 10 magne, 5 tangela, 4 ivy, 5 furret, 10 ratticates, 10 pidgeotd and so on) are all alive and healty. Just need time to prestige :)
The @ is very fast and quick to make the team, I don't fell returning to my old system to choose the team from a sorted list of hundreds of pokes. I think I will make a short team of 12-15 around 1500, asterisc their name to be first sorted by name and fight. When run out of revives or small potions, back to suicide squad approach.
