One of my blissies has defended for 2 hrs 56 minutes and time defending is over 10 hours. Does this mean she has basically been working pretty hard all morning?

I have 2 snorlaxes defensed over 1 hour and been in the gym 10 hours as well. These need feeding. Please feed them :)

No, i guess it's just Not updated to the Gym.
I also guess that the gym timer counts for your Team, and the Pokemon timer only for your specific Mon.

But not sure at all :D

It's not. I successfully retake "my" gym (I'll claim this since it's a few paces away from home) from Mystic just this afternoon. Time Defended is still different from Time Defending.
