I'm not trying to put pressure on but any ideas of how long til the new attacking and defending tiers will be released?

I only ask as I'm not sure what to bin/keep.

Answers

I keep the best of every pokémon species and everything that I have invested in, simple as that. And therefore I can wait with future investments until the number crunchers figured it out.

And I keep all legacy movesets and aim for a duplicate of the most relevant mons with useful movesets.

Fire types s tier aka moltres entei
Ice and dragon types a tier.

These 2 or 3 typing covers most of the upcoming legendary raids

To add on:

Fire:
S Tier: Moltres, Entei
Budget (but still nearly as good) fire types: Flareon, Arcanine. Flareon is better in general.

Ice: Articuno, Jynx, Lapras, Cloyster, Piloswine, Walrein. None are strictly inferior to one another. Ice is arguably the most balanced type in PoGo.

Dragon:
S Tier: Dragonite, Salamence.
Budget: Flygon. Depending on how common it is when it comes out. Or double dragon Kingdra if you already have it.

Altaria would very likely be a 400 candy evolution, and doesn't have good enough stats to be a good dragon-type. It's only about on par with Shelgon, which is the pre-evolution of Salamence!

And let's not talk about Gen 3 legendaries that haven't even been announced yet.

Articuno is usually strictly better than Piloswine, Cloyster and Walrein, having better DPS and TDO. Lapras has higher TDO, Jynx has higher DPS. Kyogre is the strongest ice attacker by a mile when it gets released.

We are currently working on the move grades and ratings of all the Pokémon. After that, we will start to make a template of the Tier list, hopefully by then most, if not all Gen 3 will have been released. Stay tuned!

Checking top attackers (high in both DPS and TDO) from pokebattler for remaining legendaries up to gen 3:

Mew: Tyranitar, Gengar, Mewtwo
Celebi: Scizor, Entei, Pinsir, Tyranitar, Moltres, Mewtwo
Regirock: Groudon, Machamp, Hariyama, Gyarados, Mewtwo
Regice: Moltres, Machamp, Entei, Hariyama, Mewtwo
Registeel: Moltres, Entei, Machamp, Hariyama, Flareon, Mewtwo
Lati twins: Dragonite, Tyranitar, Mewtwo
Kyogre: Raikou, Zapdos, Groudon, Exeggutor, Sceptile, Mewtwo
Rayquaza: Articuno, Dragonite, Jynx, Lapras, Piloswine, Cloyster, Walrein
Jirachi: Entei, Moltres, Tyranitar, Flareon, Groudon, Mewtwo
Deoxys: Dragonite, Mewtwo

Concluding from these:
Literally god tier: Mewtwo
S tier: Tyranitar, Dragonite, Moltres, Entei, Machamp (not that many raid matchups but is still the best gym specialist)
A tier: Groudon, Raikou
A- to B+ tier: Gyarados, Zapdos, Exeggutor, Sceptile, Hariyama, Flareon, Ice-types

Weather obviously influences everything. Kyogre, Rayquaza and Latias are instant S or A tier when they are released.

Obviously it's worth it to keep top attackers for every type even besides the best raid specific attackers.
