Snorlax L/HS
I just hatched my 2nd snorlax and it has l/hs 84% . I thought that this moveset is worthless defensively but gp has it as B the same with zh/us which I think is decent. I would power it up if it had zh/his because I m looking for a defensive snorlax, but now I don't know .

I don't know would you consider exeggutor with c/p a better defender? I have 2 blisseys and wg/at vaporeon that I consider my best defenders and then I have high cp mons (gyarados, rhydon) that I don't want to put them in gyms and a 2287 cp ice shard/ice beam lapras. The truth if I want to hold many gyms, I suck
I think it depends on what your gym scene is like. I have great defenders, but where I'm from, my pokemon will last maybe 20 min. Doesn't matter how high a CP my blissey/snorlax is, it will get taken down. Which is why apart from my few A moveset high IV defenders, all my resources get shunted to my attackers.
So if you want to hold multiple gyms, I suspect its more to do with how active your gyms are, how high a CP your pokemon can get (and hence placement). Movesets won't matter as much. If I want to take a gym down, I will do it regardless of whatever moveset the defenders have.
So are your blisseys and vaporeons already out holding gyms? If they are then yeah you probably could do with creating 1 or 2 high CP defenders. If they are still in your inventory then why bother creating another?
