Should I use a good eevee when evolving to Umbreon? Or is Umbreon just a dex entry?

I have a lot of good Eevee (98IV 827CP, 98IV 551CP, 96IV 467IV, 98IV 275CP, 96IV 244CP) . Also have 3 others over 91IV. I just evolved an Espeon with Confusion and Psybeam (yayy :D). I haven't used the name trick to evolve Umbreon yet. Should I use one of my best eevee to evolve to Umbreon? If so, at what CP range? Is Umbreon best for attacking, defending or prestiging? Or is Umbreon just a dex entry?

These are the eevee evolutions I have thus far.

Noticeably missing is a FS O Flareon and a 95+IV Vaporeon with W AT. But to be honest, I'm not too desperate for either Flareon or Vaporeon. I'm already happy with my Vaps and a have Charizard with FS and Overheat (and I like Charizard more than Flareon).

So what should I do for Umbreon? Evolve one of my best ones? Or maybe just a 91+IV one?

Umbreon is probably best as a prestiger, with its really high defense and good typing against Psychic. If CP ranges in your local gym scene are low enough so it could potentially get a middle placement, I think it could also be a good defender lots of people wouldn't know what to do with.

Umbreon is a great prestiger, but I powered mine up to level 30 and I have found it to be an excellent attacker against Psychic and Ghost types. What's especially nice is that Umbreon has only four movesets, and although both Feint Attack/Foul Play and Snarl/Foul Play are the best, all four movesets are good—none are rated lower than a B by GamePress; so you are guaranteed not to evolve a bad one.

Umbreon is a great prestiger, given it's low CP and great defensive stats. Obviously it's low CP prevents it from really being useable as a gym defender, but there's a chance though with the Gym rework that's coming that CP might become less important, which could make Umbreon a very useful defender.

I would say use one of your high IV Eevee's, maybe not the 827CP, but one of the ones just below that. That will put it in a good CP range for prestiging, and if you want to you could power it up later. Also, as Simon said (lol Simon says) there's no real danger of rolling and getting a bad moveset, so I'd say go for it.
