What level should I try to keep my prestiging mons? A normal gym for us is 2k-2.8k mons

Yes, like this, always keep the mons you are prestiging at half or less of the lower CP mon of that gym, if that gym starts for example with a 2200 Vaporeon, keep all your mons at max 1100 CP to get 1k prestige for each one you defeat.

2k+ in the lower levels seems to be the norm nowadays. With eyes on these numbers, I am building two complete sets of trainers, one with 1000 CP, the second with 1200 CP.

My mons in the 1200-1400 range really do the heavy lifting, but I'll go +/- about 200 on that number depending on the situation.

Sometimes it's better to go closer to 60-70% IV to take out more/harder defenders in one shot without having to waste a ton of time healing/reviving/and re-choosing your team

Usually I've found my 1800's get more use than any other prestige team. Gyms here often have at least one strong Snorlax/Lapras near the bottom or middle, which would be incredibly hard for a 1200cp mon to take down and cost too many resources.

I've found that the lost prestige versus using lower cp prestigers is hugely made up for by the increased takedown speed and prestige gain from the 3k dragonites I would never reach with a 1200cp prestige team.

Whenever I need a 1400 prestige team, I'll just whip out some spare Mr. Mime/Fearow/Hypnos and transfer them after they're dead.

Yeah, without Sir. Wigglesworth I'd have a hard time prestiging Snorlax. You really can't have enough of them with Pound/Hyper especially.

I'm also thinking about evolving a couple Rhydons so they fall in the 1200 CP range to do the same thing.

Honestly I find Lapras harder to prestige against anymore. Instead of raising the CP and losing points, I basically just assign him 2 Fire Pokemon at 1/2 CP and go in knowing the first one will faint.

I find 1350-1550 to be my normal range.

I usually don't get the first pokemon with 1000 Prestige but usually I need to get to the 2600-2900 Vaperons and especially Gyrados's deeper in Gym.

Ideally my 6 pokemon team will beat at least 6 pokemon and my total prestiget will be 3k to 5k a run.
