Anytime I complete a field research and click box to catch mon my game always freezes up and I need to restart? Happening to others?!

Yep, happening to me as well atm. Pretty sure they're working on fixing it.

Happens first time everytime I claim a research encounter.

EDIT: Coming back to report that I read a suggestion to turn on camera. On iPhone, go to Settings - Pokemon Go - turn on camera. Bug is not afflicting me anymore. *shrug*

I had that happen to me. Just restart the game and turn on AR, that's how mine got fixed.

It was already a bug in the previous update, happened to me several times.

Does anyone know if the Pokémon are at least still there when the game restarts?

Of course. You can't lose research encounter pokemon. They do not run and if you run from one or your app freezes/crashes, then the encounter is saved in a queue with other uncaught research encounters. People have occasionally reported research encounters running, but they ended up actually have still been caught or they were placed into the queue.
