So with this update gen 1 pokemon can't learn anymore the old moves? (*legacy moveset)

Yep, 90% all of the good moves.

RIP any pokemons who got good moveset and later destroyed by this update.

Yes, but the change is even more fundamental. Almost ALL moves got rebalanced. Even the good legacy moves are not necessarily good anymore since they are basically not the same moves anymore.

Not exactly related but yet I got 3 Flareons with ember/flamethrower.
