Legacy moves - Exeggutor & Snorlax - what to do?
I have 4 Legacy C/SoB Exeggutor
My best 2 are: Lvl 36, 96% (15/15/13) and Lvl 33, 91% (14/15/12) - the other two are Lvl 20 and low 80%
I was thinking of maxing out the 96% eventually and CTM the 91% to try and get Seed Bomb. I have found the C/Seed Bomb move set to be a really annoying moveset - thoughts? I also have a Lvl 35, 96% (15/14/14) one with BS/SoB
Separately, I have a Lvl 30, 64% (12/14/3), Snorlax with L/BS
Should I FTM it to try and get ZH and use it for defensive purposes? Initially, I wanted it to anchor my Mewtwo team but anchors aren't really necessary anymore plus I have a strong group of counters anyways. I also have two powered up Blissey (Lvl 38 &32 with ZH/DG for my high turnover meta).

If you want to use Exeggutor as a gym defender for fun and diversity, C/SeB is the moveset you want. C/P is good too, and If I were you, I'd want psychic on at least one of those Eggs.
Unless you like to use the Snorlax for potion-efficient gym sweeping, sure, get ZH. It may not be as tanky of a defender as Blissey, but those pesky body slams can really be problematic for common attackers.
If an attacker has to switch to Tyranitar to take on the Exeggutor, the Eggy has done his job as a defender. If the attacker is already using a T-tar to sweep the gym, neither psychic nor solar beam are likely to ever be launched, and the T-tar will barely notice a couple of pokes from seed bomb. Against neutral attackers, psychic is much more likely to actually hit than solar beam.
I would absolutely FTM your Snorlax. As you said, anchors aren't necessary anymore (with the niche exception of starting a raid and leaving the gym as soon as the battle starts, in which case you can't rejoin). It's not really any use for attacking, so make it a defender. BS is annoying to fight, even if it doesn't usually deal enough damage to threaten a KO against Machamp, the psychological effect of nonstop Body Spam is real.
Also I would not make Exeggutor into a defender as Tyranitar wrecks it and Dragonite doesn't care that much about it.
L30+ C/SoB eggies and C/P were the majority of my champ solo squad before I got a few extra Zam. I still use them for a slot or 2.
I would actually consider the L20 eggy for C/SeB or C/P defender due to CP decay. They fit squarely in the optimal 4+ hour defender CP range mentioned in the defense meta article. They also cover the weakness of those most likely to attack blisslax and chanking defenders — fighting types. As such, I use C/SeB and C/P eggy (of all CP) all...the...time as gym defenders.
