So I read that if you evolve to Breloom, you will get Grass Knot. And this is after I have evolved my 100% IV Shroomish. Argh...

If it makes you feel any better, while grass knot will put Breloom at the top of the DPS list for grass-types, it's still very very frail, which means that FP Venusaur will more often than not do the job better.
In PvP, grass knot likely won't be a direct upgrade over seed bomb on account of the latter having a lower energy cost and being easier to spam.
We're starting to reach a point of FOMO overload. First it was 10k hatches like Dratini, then every starter, then legendaries, then random 3rd stages (Gengar), now random 2 stages with Breloom.
It's to the point where I don't even care anymore. Something blatantly obvious like a 98% starter or a perfect 10k hatch like Bagon I'll obviously save but I can't sweat it out worrying about every little possibility. Breloom is something I'd never have guessed as getting an exclusive move, and realistically how often are you going to use a non-fighting Breloom? Grass is niche for PvE and Breloom itself is niche in PvP.
So that's my venting. So much FOMO has been introduced that it doesn't pay to worry about it anymore.
This is how I see things too. I can't stand the FOMO. But at the very least, every pokemon that has received some sort of exclusive move has had their spawns increased drastically for the event.
So even if you've already evolved your best Shroomishs, you'll probably catch a dozen more good ones during the event. It's a nice offering from Niantic but it still doesn't make it right imo.
