I am quite the underdog in my area, usually the only instinct member in gyms at my local park, though a few others did add to mine today, and I usually see another at least every month or so. Personally, as a level 33 trainer, I would be unwilling, but from what I've seen, you could probably find others.

Stagnation is slowly comming back in gyms in my town. It is the same for a 100km radius around me. Spot in gyms are getting scarse and no gym battles as I refuse to wipe out other teams as soon as they get in a gym like several other blue trainers here.
I feel like I'm missing a whole aspect of the game, being the underdog here forces you to get the best defender, and if you are active in gyms enough, you get few to full daily coins, I'd love to be the underdog in PoGo, always did in video games, more challenge more decisions.

Why don't you just keep that Mystic account and start up an Instinct account? You'll level up quickly since you'll know what to and not to do. This way you'll know what your Instinct Pokemon Inventory is. What if you trade and you got complete garbage. Not even an equal trade. Of course that's a risk I assume you've already considered.
Then you can shave gyms to benefit yourself. :)
Under the old gym meta, my family and I had to battle against Mystic-srat-bots in our area daily. It got to a point where we had to take a break because it wasn't fun anymore and... you weren't beating those old school bots.
The current gym meta was a breath of fresh air, coupled with the destruction of botted accounts with the slash of death, my area was purged of the Mystic strat-bots and lvl 35-40 botted accounts... now they're replaced with Lvl 25-33 botted accounts (LOL) but we can deal with those as our accounts are intact.
We never knew it at the time but being the under dog in our area forced myself, my wife and our three kids to make our accounts as strong as possible, offensively and defensively. Battling bots also made us mentally tougher and overall better players that today's gym meta is simple to handle considering our little territory spans the 3 gyms we see from home and the 1 we can't. We've considered expanding our territory to three other local gyms but decided we don't want to be greedy.
My point is, I wouldn't advise trading over to be the "solo" underdog in the old gym meta particularly if your area is bot dominated, but todays meta (though bots are still present) is more than doable solo. I imagine it might be a blast, too. My little tribe is 5 deep, and to be honest, the gym scene poses no challenge for us anymore after all we've been through.
If you feel the need to be challenged, find yourself someone willing to trade, bro. For my tribe, it's gotten to a point where, to place weaker 'mons and to have crazy fun, we've employed my mum to help us make gyms like this:
Similar story here. I was forced to make an account here that was primarily overpowered optimal counters. After the change my account of necessity became exactly what you want for the current meta with plenty of defenders too just not like the gym holders accounts.
Funniest part is raiding with those guys and discovering they have no idea how to optimally attack because it's something they never really had to do before.
