I'm in the same boat. I have 2 T-Tars but I really don't want to max out any more. I would like to get more variety in my teams even if the DPS would be slightly less. I would still get max balls for raids because most trainers in my area are lvl 20-32 who only use lugias. So I think for now i'm going to focus on other mons.
How many Tyranitars are "enough"?
I got two maxed out ones already and 3 semi good IV (84-91) ones sitting at 30, but I consider powering up two more, as I got 2 more 98IV with 15 Atk ones, so it kinda feels like a waste to not touch them.
I can see it having some more use in future raids, which is my main goal. For gym sweeping those 2 are just fine to get through everything with ease in combination with some other top tier attackers like Ray, mewtu, Raikou and Machamp, so that barely matters to me.
One thing Im afraid of is the appearance of Dakrai, that might outclass it completely.

Yeah, having more variety is also an argument against another TTar for me, have a 98 Sc-Sb Gengar, that I considered maxing out, also a 98 Salamance. Unfortunately there are simply better options at the things those to guys are good at, so I cant overcome myself.
I have two TTar at or near max and doubt I will invest in any more just for the sake of diversity. In some situations 6 TTar would be the absolute best option but rarely would that ever be necessary. Most legendary raids are helped more by having a larger group of players as long as players have decent if not perfect attack parties.
I would go for 4 of them total. They're extremely useful because:
1) They're extremely unlikely to be replaced
2) They're not necessarily classed out by anything in their roles. Gengar has higher DPS and SB Mewtwo is close, especially in cases of Focus Blast
3) They have very high stats and are good generalists
4) Psychic types are among the most commonly seen, and Psychic-type attacks are among the most commonly seen in gyms
This means I would probably go for maxing out Tyranitars over a team of them. In a Mewtwo battle, unless you are up against Focus Blast, you're unlikely to go through more than 3 Tyranitars using the maximum timer possible (and you may want to put in some Gengars before them anyways, if you have them). In most cases, you will have another mon that you've maxed out already that will fit in your team, so it's unlikely that you will be unable to find 'mons to fill the last two spaces.
Take my team for example. These are the Triplets (one was my only ever 100% raid boss encounter). Against Mewtwo, I slot in a SB Mewtwo, and against Focus Blast, Gardevoir and Lugia clean up any mess that remains after their demise. Against Latios, higher damage but glassier options go first, such as Salamence and Rayquaza. Even against Solarbeam, I generally don't time out. I have 3 maxed TTars are the moment but I'm considering maxing out one final Tyranitar. After that though, it won't be necessary. There's no real point in having a team of 6 ttars since they're the best all-around option but are sometimes covered by other 'mons OR out-DPSed by Gengar or a subtype weakness. However, I would still max out 3-4 total as they're unlikely to be replaced, can be obtained via Raid Boss encounters, eggs, spawns, and walking (they make a great walking buddy, the best IMO), and have stats high enough, and moves bad enough, to where any move rebalance would likely only play into their favor.

That one argument, you mentioned I dont necessarily agree with though: not being outclassed. I am not sure, if Darkrai wont take over TTars role as dark premier specialist. What are your thoughts on that? Gamepress only offered the projected max CP of 3400 for Darkrai but not the stat split and I assume its attack is going to be stellar. Couldnt find reliable sources to find out that max atk stat.
I dont have a Gengar powered up yet, but dont have enough dust for both rn, so would you prioritise on a 3rd TTar or ScSb Gengar?
In most cases I would prioritize the Gengar (especially because you already have other level 30 Tyranitars), but because we now have 9 weeks of Latis to look forward to, you may want to consider the Tyranitar unless you really want to get ahead with the Damage Balls (revives shouldnt be a problem anymore)
Yeah, Darkrai looks like it could take over the DPS game, it might have something like 285 Attack and near 200 defense (might it receive another ~10% stat nerf?), but a few things to consider on that:
1) It's like a legendary in that you'll likely Rare Candy to max it, so unless you're an extremely hardcore raider that already has their gold Legendary Raid badge, you probably won't be maxing out more than one of them
2) We don't know for sure that it's coming out at all
3) It's a Mythical, so, like Mew, you might only get one of them anyways
4) It's far in the future
5) Its overall CP is lower than Tyranitar, and it is glassier despite more damage
So it may threaten Tyranitar, but I don't think it will upset its throne. This i why I tell people to keep a team of 3-4 Tyranitars powered up, the gaps allow you to slot in a Darkrai and a few others. However, I find it unlikely that it will be possible or feasible to gather a team of 6 Darkrai - This is the same argument as people saying that you shouldn't power up Raikou because of Zekrom.
Because you can not only obtain and use Tyranitar right now but also walk it, I assume that you'll be able to fill in the stardust AND get good use out of Tyranitar before this hypothetical threat comes in. If anything, it will be a good supplement to your Tyranitar team once it comes out. It'll need the bulk backing it to survive and you won't be getting a full team of Darkrais for raid use anyways.
I'd say 4 is a good number to max out; 2 for your First Team during Raid Battles, 2 for your Second Team when necessary. I'd have 2 more non-Maxxed out TTars for larger raids against Mewtwo in particular, if you have a large number of Trainers in the Raid and you need to do as much damage as possible as quickly as possible to a non-Focus Blast Mewtwo, but I'm weird.
I know that this is an unpopular answer, but I would say that with the current set of bosses 0 ttars is enough, all of the bosses ttar is either useless or outclassed. latias/os is the only one it's SE against and evolved lvl 35 d'nites from comunity day are better than a maxed out ttar vs the eon duo
