Is this a good strategy?
In my town, gym turnover is crazy. So I decided instead of putting my highest CP defenders, instead I put in those mid-level pokemon that have high defensive DPS movesets to just eat into the attacking trainer's potions and revives. So instead of a Vaporeon, I put in a Vileplume with razor leaf and petal blizzard after taking down a gym. Less wear and tear on my own supplies, while hopefully putting some on theirs. So do you think this will work?

Totally agree on this, more even than the potions I get upset with the time, you can take down a gym, put a good defender there and take the time to take it down lets say 6 times with a mon half of its CP so you maxed out the prestige you get per battle, when you finish you have like 3 or 4 slots open and it took some time to do it, after some time (for example 30 mins), the spots are filled with 500 cp mr mime ( I have seen it a lot on my town), or 1k flareon/arcanine, so anyone can destroy that gym in a matter of seconds with just a single mon...That's the main reason I just level up gyms to put my mon and prestige them more only if they are level 4+ and already with some good defense mons there.

As attacker, i woud be glad. As it still takes a bit of time to kill vaporeon (unfortunately I dont have a good solarbeam-pkm, and dodging with jolteon with either smartphone-gloves or ice-cold fingers is somehow hard), just my Arcanine gets some work burning a Vileplume.
Do you really expect attackers just to play down their lineup without thinking of type-matchup? Sure, some will do, but not all.
I use a slightly different strategy, that at least works here. I try to get into the gyms in the outerskirts and villages around our town, where takeover is lower.
So i have some more or less permanent gyms. Before harvest, i go into town and put opportionistically my pokemon there, where i find a free space or where takedown / Training will not take long time. Then i harvest my 100 coins and don't mind to get my pokemon back fast. I have two snorlax, two defending exeggutors, some vaporeons and poliwrath / slowbro. I just put the biggest one of them in, I don't want to make takeover easyer than necessairy.
Low on potions?
I dont know, maybe use Cloyster?
It has very very high defense but low healt and it has good typing.
And with ice shard + blizzard (or hydro pump) it could maybe even do some dmg before fainting.
Just my wild suggestion, nevr rlly tryed myself.
Cus if you need low healt pool, then you must have high defense at least, imo.
Hydro pump is harder to dodge, it comes with less warning. (for those who spam attacks like crazy)
Blizzard would be douple effective vs dragonite.
BTW, it is tier 3 defender.
I dont think using vileplume is good idea, its not even on defender tier list.
Propably because it will be easily destroyed by fire pokemons and this game have some good fire pokemons like Arcanine.
Casuals will use Flareon, but good players have Arcanines and they will eat vileplume alive xD
When I go for a lower slot in the gym in order to bolster defense, I try to pick something to frustrate the attacker. They want to take out multiple defenders with a single mon. So I put in something which has only odd weaknesses. Everybody has strong Eevee-forms, so weakness against Water or Electricity is a No. Due to the many Vaporeons, everybody has Plants as attackers, too, another NoGo. Add in as requirements reasonable high CP and STA, and besides Snorlax there are mons like Clefable, Machamp, and Muk, Kangashakan if you have access, and a little behind Hypno. Sure, the attacker can prey on Muk using a Ground or Psychic attack. But it this case he has at least one attacker that is not very good against anything else.
Your strategy of putting poison-plants works in the same way, as long as there are no other plants or dragons, which would also be weak to Fire or Ice.
I make my gym runs at 7am, after getting-off work and the Instinct guys got done making his gym cash-in. So its not hard taking them over usually, but Mystic players start rolling-out bed around then so I've lost all my gyms by the time I've gotten home (10 mins). Then they lose to the school kids, so a few extra gym levels with a Snorlax won't help much because I'm the only early morning Valor player.
