Dragonite DT HB vs HC on offence and defense

I have DT HB and DT HB dragonites from hatched and evolved eggs.

Which one is better on defense? How much better?

The HB one got better IV than the HC one. I'm inclined to HB for higher CP at any level as defender.

Hurricane w/o a doubt it gets stab and is a incredibly quick charge move like HP and SE.

DT/Hurricane is superior and is also a good move both on offense and defense.
How much difference there's in terms of IVs?

HC: 87%
HB: 100%

Not much of a difference. Specially if the 87% one has attack as his highest stat. But I can understand why leaving behind a 100% is a hard thing to do.

I would go with Hurricane.

Can you power up both? You have 2 DTs shortly after the Gen 2 release. How hard are candies to obtain?

Actually for dragonite, you want STA as the highest IV, since the ATK and DEF are already higher, that 15 STA will have a greater effect on the overall performance.

I'd also rather use hurricane, because it's more likely to take the opponent with his pants down, having said that, right now gym defense is all about CP, so I'd probably go for the 100% one regardless, as it will give you higher chances of staying longer in gyms, even if it's technically not the better defender.

About STA and performance... True.
I said attack because of what you mentioned about CP and gyms.
Since attack counts more in the formula, it would have more CP if the attack was the highest one and the difference in terms of max CP would be minimized.
