Ditto question...
Should I be hoarding Dittos in the event that breeding ever becomes I thing? And if so, do IVs matter? Would I need multiples or only one good Ditto?
I never played any of the other games so I don't quite understand the breeding mechanics. Thanks!

Not hoarding Ditto's, no. You probably need 3 - a Ditto with a 15 in each IV - at most.
However... we have NO idea how Niantic might implement Breeder. IF they decide to implement breeding. And Ditto can be mad-hard to find (I just spent 3 weeks with a Catch a Ditto for 3 Rare Candies quest, for instance). So keeping more than 3 Ditto might be worthwhile, if you've got more than 3 and are asking about transferring some. And you have the Storage space.
If it ever happens you will AT MOST need the following:
-A perfect (or near-perfect) Ditto for general breeding purposes.
- 0atk/15def/15hp for PVP fine-tuning since many species benefit more from having low attack stat due to CP formula.
- 15atk/0def/15hp for certain damage-energy breakpoint gains
- And maybe one with each stat at 15 but I can't think for what specific purposes they would be useful. In general you will only want low attack or low defense but not low HP.
