If I redeem a second attack for a stage one Pokémon and then evolve him, will the evolved Pokémon have two attacks?

Both will be randomly rolled.

I really wonder how this will work with CD moves, if 1st move will be guaranteed exclusive move and 2nd random, or both random, or who knows how Niantic will handle this.

apart from Eevee (who will be no good in PvP), we only have final evolution stage pokemon with CD moves...

That's not my point, as you can't evolve that Eevee now to get Last Resort on whatever it evolves into. The issue for me is how it will be handled when evolving during CD hours, which I expect no one to have experience with it until January.
