IV over Moveset?
Given recent changes...anyone feel different now about movesets being greater than IV? It would seem hanging on to high IVS would pay off overtime for a long term player? Provided they don't change the ivs of people's mons?

Movesets are key to everything...always have been.
IV is important to get max CP for a defender.
What has changed is that now you can select the style of play you prefer for attacking.
If you want fast dodging, and quick movement then you can get movesets accordingly - alternatively if you prefer the 'stand and deliver damage' style, then there are movesets for that too.
It is almost as if none are massively superior to any other movesets, so you can pick the one that suits your attack style. (some exceptions)
For defense...there will always be the optimal mons, with optimal movesets that need high IV for gym positioning.
Not much has changed...other than all styles of attack now have options.
Depending on your gym scene, IV's may matter for high-CP defenders where 40-60 CP points can mean the difference from being in the middle of a gym (therefore reasonably safe from 2nd account snipers) vs at the bottom of the gym. I know the purists tend to object, but until Niantic implements 1 species/gym rule this is the reality and what the end game looks like.
Movesets. I agree with Project0, 80% ivs and above. Id focus on high ivs for pokemon with Max cp around 3500 due to level 30 being above 3000, good for high gym placements. Other then that, when it comes to attacking, ivs are not that important. My vaporeon water gun/hydro pump iv around 50% works perfectly fine.
I have always said IV is a maximalistic end game thing, 80% is not hard to get and the difference from a 100% is negligible.
I have transfered 100% Pokemon and I will do it again, don't hang on shitty mons just because of their good IV.
With that being said most good Pokemon dont have bad MS - Blissey, Dragonite, Snorlax, Tyranitar, Gengar - all of their MS combinations are good
