It would be a very difficult solo, if you can even do it. You really want a full team of Ttars, stuff like Gengar and Weavile are just not tanky enough for solo'ing. You might be able to do it against Psycho Boost but would be difficult against the other movesets. If you have to relobby twice, you're basically toast.

With the above, how difficult would the solo be with the above team?
Two months ago, I earned a 15/14/15 Tyranitar from a raid, but I have yet to power it up. Would maxing it (I have 2M dust and 389 candy) make a significant difference to this solo?
Any advice on the solo itself, such as dealing with specific movesets or whether to dodge to avoid rejoining?
(For Zap Cannon, I could use my L30 Groudon, MS/EQ, 14/13/15 as an anchor or even max out a perfect Groudon acquired last month.)

It'll be more difficult than before the raid boss HP buff but not impossible by any means whatsoever. Using some numbers from Pokebattler, the Pokemon you listed have the following TTW (time to win) against an unknown moveset:
Tyranitar L40: 222.2s
Tyranitar L30: 240.1s
Lick Gengar L30: 267.4s
SC Gengar L30: 268.1s
Weavile L30: 264.0s
Houndoom L30: 279.2s
Scizor L30: 299.1s
Looking at these numbers, it's really not a difficult solo. The guide on this website details how there are several options available at as low as level 30 that can contribute meaningfully to a solo.
Unless you dodge, rejoining is an inevitability unless it knows Psycho Boost and you use a full team of Tyranitar. Dark Pulse being multibar will give you dodging headaches and Zap Cannon will annihilate anything that fails to dodge it. Still, keep the Groudon at home - you won't need it.
Gobattlesim says easy solo using the 2 Gengars, Weavile and the 3 Tyranitars and rejoin by max reviving. Time to win is between 220 and 270 seconds depending on boss moveset. Against Zap Cannon you definitely want to dodge a few times to avoid rejoining twice. If you dodge all charge moves, you can probably do it without even rejoining once.
Making another Tyranitar would not make a significant difference in my opinion. Even after the buff, you can solo it with level 30 attackers. Don't use Groudon against ZC, the huge drop in DPS isn't worth the tankiness. ZC is easy to dodge in a solo.
