Best Investment for Pokecoins

Hey I just reached Level 30 =)

I'm farming 8-10 Gyms everyday so right now I am sitting on 500 coins and wanted to know what is the best way to spend them?
Buying Lure?
Buying Incense?
Incubators?
Lucky Eggs?
I used to buy lucky eggs only but I can't catch enough Pokemon to use them just for evolving which is the most efficient way to use them I guess.
But leveling up gets really slow anyway and its not really efficient to power anything up beyond 30. I'm thinking whether lucky eggs are still the way to go?

Since Level 20 I used Incubators only for 10K eggs but I am not really lucky getting them, so I'm sitting on 3 Incubators, would you buy incubators and use them also for 5k eggs?

What strategy are other high level players using or planing to use?

Incubators all the way. That's a very good way of farming stardust, which at level 30 starts to be a nuisance. I have used incubators for 5km eggs always. At level 30 you shouldn't worry too much about leveling.

Buy incubators and incubate your 5km+ eggs. Use your infinite incubator on the 2km eggs. There is no real difference on whether you use your incubators on 5km or 10km, because you're going to hatch the eggs eventually. At least if you hatched your 2s and 5s, you have more room for 10s.

Lucky eggs are useless, as there is no incentive to level above 30, Lures and Incense are not too useful unless you want to farm a lot of candy/dust. I would use my coins on atorage (if you haven't already) and on incubators to get that dust. Just put as many 5/10 km eggs as you can and go at it.

I've mostly bought incubators with the coins I collect. However, I'm currently saving up 1250 coins so that I can buy the 25 lucky egg pack. That will get me set for lucky eggs for the next ~6 months since I use them about once per week, whenever I get 60+ pokemon I can evolve. Lucky eggs are well worth it, since they give an extra ~30,000 XP per use.

After that though, all my coins will go to incubators. Unless at some point I decide I want a Pokemon storage upgrade.

Incense and lures are a massive waste of coins.
