I deleted the app last night and reinstalled it this morning. During this period two mons are knocked off the gym and news mentioned they in total bring back 74 PokeCoins, but they are not added into my coin pool. F word to Niantic.

Deleting and reinstalling the app should have no affect on the coins you earned in the meantime. All of that is handled server side.
