126 for me (though I have one unclaimed as well). Two of the tasks I have at the moment are the "catch three pidgey or murkrow". For some reason I've hardly seen any Pidgey the last couple of days. I thought they would be way more common during this event, but maybe I'm just unlucky. No Murkrow as well, but that is more expected (though I've seen some gen 3 Pokemon around).
How many field research tasks have you completed?
130 for me. After you get your stamp do you keep easy ones even though you may not be interested in the reward (berries)? One cool thing, many times the task will instantly tell me if the go plus caught the creature or it fled.

I saw Zangoose and Volbeat today. Was very surprised because I thought we'd only see Gen1 now.
As for the tasks, I thought about throwing away the Pidgey/Murkrow ones, but since I can complete them if I can only find a couple more Pidgeys I decided to keep them. I don't want to give up too soon.
Mudkip/Treecko however, I'd drop that one immediately at the moment. I had no problem completing that one before the event, but now I wouldn't waste my time on it.
I've had the "power up 5 times" once and did it. I wasn't too keen on it because I hate using Stardust, but I also didn't want to "fail" a task :(
In the end I power up Pokemon that only required 200 dust. This was during the double dust event, so I got those 1000 dust back in no time.
I've caught 3 Solrocks during the event (my only 3), have seen Illuminize, as well as a few Murkrows. I have the field research task 'Catch 3 dark type pokemon', and I would have pitched it, because of the event (since there are NO dark gen1 pokemon), but the reward is 500 dust, so keeping that.
On the flip side, before this event I've seen a total of 5 Machops in the wild. During the event, I've caught at least 25, and passed on a few more. Built up an army of Raid win Machamps, and the bad ones are now going in gyms and then to the professor (for double candy). And after evolving a Magikarp, I still have over 600 karp candy, so if they do this to us again, I'm prepared.
Well in pace to get to gold before the end of the month. I mainly do them for the medal so tend to keep the ones that are fast to complete, regardless of reward. The only ones I will hold on to longer are the few with very valuable encounters.
I love the catch 10 pokemon quest also, with speedcatching it saves tapping the mon again to see whether I caught it or not.
216. Initially, I tried to do them all (for 2 days) but now I tend to favor ones that can be done with whatever I am doing at the time.
If I am on break at work, I've gotta throw away anything raid related and likely gym battle related. But I will remember where they were for when I get off, so I can potentially go do a raid. Also, what Pokemon are around plays a big part in whether I keep the challenge or not.
But the big thing is the prize. Look at this first and then decide if the challenge is worth it. I will only keep one hard challenge, at a time, as it bottle necks up the total.
Best I did was getting two copies of Catch 3 Fire Type on the day before I would get Moltres. I collected an easy task at Midnight and then Moltres completed the first Fire type while adding 1X to the other and then that second one gave me a Magcargo for another Fire type hit.

I recently realized there is not much advantage to doing more than one a day.
The hardest one was 3 great balls in a row, I almost gave up but finally got it. (I hear there is a 3 excellent in a row, dreading that one!)
I also have a catch 3 treeko or mud skip that I have not seen and have made no progress, I was excited when I hatched a mud skip only to find out that hatchings don't count. :(
