Wow, I can't solo a Scyther lmao
Air Slash + Aerial Ace is just too strong in windy weather, I used 3 Golems (1 RT/SE and 2 RT/RB), 1 Tyranitar, 1 Pidgeot and 1 Crobat, but it killed my whole team in 105 seconds despite some dodging (man, Aerial Ace can be seen coming half mile away lol). Anything I can do to successfully solo it? Should I add some Magnetons?
DPS wasn't a problem, the first 3 Golems got it to yellow before the 90 seconds mark.

Pidgeot and Crobat sound like they were probably the weak links in your team here. Neither have impressive bulk or damage output. Consider replacing them with some fire types (Entei/Moltres preferrably) or another Golem.
Otherwise, I'd just avoid doing Scyther raids when it's windy. Weather boosted moves are no joke!
Replace Pidgeot and Crobat with some better pokemon. Pretty much any rock type (even Sudowoodo), Raikou/Zapdos (or Jolteon) would be great. For mons that don't resist flying, Moltres/Entei or Flareon.
And then dodge more. I've done weatherboosted AA myself and it does hit hard, but as you said, can be seen coming from a mile away. You should have enough DPS that you can double or triple dodge just for extra safety and still finish in time.
I use a team of 4 golems. Even weather buffed, I get through with time to spare. Lately, it's been 4 golems (levels 35, 33, 33, 31). That will do it unless Scyther is weather buffed, and then there's a Ho-Oh with Extrasensory/Brave Bird (my Machamp anchor) at the back to finish it off. All golems have 80-95% IVs, and RT/SE. Eight Stone Edges usually finish off the Scyther.
Tyranitar is interesting - if you're facing bug moves, he folds like a house of cards, but against Night Slash, he's a total tank, and dishes damage too. All that said, Golem's pure rock damage and Scyther's double weakness to rock makes this an easy pick for best matchup.
Fire works, but Scyther is only singly weak to fire. Power up the golems, make sure you aren't bogging them down with ground moves, and you'll blow through Scyther like a hot knife through butter.
