I just caught a 719CP, 100% perfect IV Eevee. What's your opinion, evolve it now and hope for a Vaporeon (already have plenty of good Flareon and Jolteon), or wait for Gen2 and go for a killer Espeon (if there is a new nametrick)?

Keep it as it is for now and wait until gen 2 is out and the new easteregg is discoverd. If evees are as commen for you as they are for me then I guess you are not really in need of another jolteon etc.
just my opinion

Eevee's are incredibly common indeed, but for some reason all my good ones turned into flareons. Have a couple Vapes now with high CP but crap IV and Water Pulse, so I'm still looking for an attacking one with hydropump

I would wait at least until Monday when a new announcement is made.

I'm waiting myself before evolving Bellsprout, Eevee Poliwag, Oddish, ...

My strategy is keeping my two best Eevees (700+ CP and 90%+ IV) for Gen 2, in hope of a new trick! I already have more than enough good Vapes, Flareons and Jolteons anyway.

did you get a vaporeon evolving him from eevee? If not get the vaporeon he is op more than espeon or umbreon will be.

Well if they didn't add in new moves, Espeon is going to suck with probably Confusion as its first move since it can't learn Psycho Cut

Why can't it learn Psycho Cut? Because of the original games?

And I really hope they introduce some new moves with Gen 2, because they are getting pretty stale by now. I'd not be looking forward to a dozen more Water Gun + Hydro Pump mons.

Yeah, after all it is a Pokemon game. All of the original games follow the same pattern, its very important to me and to a lot of guys/gurls that movesets are "correct". Getting and Espeon with Psycho Cut when it has always been unable to learn such a move would be a huge middle finger to anyone who spent time on the original games. So far everything has been correct (atleast i havent noticed anomalies), so i expect it to stay that way.

Go does have some really weird moves like Dragonite Steel Wing (Only through TM, never learns it with level up/egg move/etc), or Poliwrath Ice Punch (move tutor), but technically they are "possible" so im cool with it. Phycho cut Espeon would not be cool anymore though, since its impossible.

Evolve it now and hope for Vaporeon if you are looking for the strongest pokemon. Espeon will very likely get stuck with Confusion (does not learn Psycho cut or Zen headbutt), which is terrible for attacking pokemon. And Espeon wont make a good gym defender either because lackluster hp and defence. I have seen some wild calculations estimating Espeon's max cp to +3000, but i think she will still be quite useless.
All of Eeveelutions have only one choice for a quick move, and Confusion is the only one that makes any sense for Espeon. Sad...

Hmm, I just noticed it's very high attack and with psychic typing it should be a very useful attacker. But I did not think about the moves, but what you say does make sense. Guess I'll wait until Monday at least

Ya, but we already have Alakazam. Espeon will always be inferior because no Psycho cut.
And about new moves, i dont believe that will happen. We are not using "Gen 1 moves" at the moment even though we have only Gen 1 pokemon. We already have stuff like Feint Attack and Bullet Punch for example, which are Gen 3 and Gen 4 moves. Release of Gen 2 for Pokemon Go doesnt mean that we get new moves, since we already have them.

But it's not so easy to get an Alakazam, and then also get the best moveset. The only one I have has Psycho Cut/ Dazzling Gleam.

If you already used Rainier, wait to see if Gen 2 is released. I think that Espeon will at least be the second best Eevee variation and worth having.

I would put my money on Umbreon for "second best Eeveelution". Great defense and stamina and dark is really good defensive type, hard to exploit. Feint Attack/Dark pulse is the most logical moveset, and a lot better than Espeon's. Could be usable gym defender, never gonna beat Vaporeon though.
Im saving few epic Eevees aswell, but thats just because i dont have use for more Vap's, and i like Umbreon and Espeon. I know they will end up weak and im cool with it.

I evolved 45 Eevees to date and only one is a Vaporeon with Hydro Pump. That is a bit unlucky but it is only a chance of 1 in 9 when you evolve an Eevee that you get what you want. So if there is an Easter egg for the new evolutions I would personally go for that option.
I am now keeping y good Eevees for generation 2.
