Did my first Omastar solo today. Hydro Pump, a lot easier than Vaporeon w. Hydro Pump. Team below just missed with the tiniest red bar left. TMed the best Seed Bomb to Solar Beam and took it down without any problem. Three Exeggutors with SoB will probably make it after a few tries, four SoB will have no problem. You can put a pidgey in 6th spot, which means no dodging necessary.
Is Hydro Pump the toughest Omastar to beat?
I think the toughest would be rock blast, though I've only attempted (and succeeded on my first try) hydro pump.
My lineup was (all level 30):
BS/SoB Egg
VW/SoB Venusaur
VW/SoB Venusaur
RL/LB Victreebel
RL/SoB Vileplume
C/SoB Egg
I beat him with about 10 seconds left. I had just gotten to my Vileplume and finished him off with 2 or 3 RL before he went down. I found this solo incredibly easy and could have taken him down faster, but I was being very cautious with my dodges.
Rock blast is much harder. You would struggle to get off 2 SoB w/o dodging with your line up. Only my 2 maxed eggs were able to keep up w/o dodging. Maxed raikou and Machamp did well too.

I actually found ancient power to be tougher than rock blast. Rock blast is harder to dodge, but it doesn't matter, because you can just ignore it, and it won't do enough damage to slow you down. Ancient power is very easy - and therefore tempting - to dodge, but dodging a lot hurts DPS. On the other hand, if you don't dodge ancient power, it hits considerably harder than rock blast, which can cause you to lose the occasional solar beam. With ancient power, you have to dodge selectively, only when it will allow you to launch a solar beam that you wouldn't be able to otherwise.
I only made one with RB first attempt. I never dodged and had terrible timing (2 times he killed me right before I got my Solar Beam off). I had about 12 seconds left.

So I'm not sure if RB is harder. Maybe because HP is not effectiv against any of your pokemon RB is slightly more challenging but it's not like Machamp where you have a big difference between CC and DP.
I've done it against a HP and Rock Blast. Rock Blast was the harder of the two for me. The Rock Blast ticked down to Zero seconds as the confetti hit, the Hydro Pump I beat with 15 seconds left.
