Maybe after ur Kabigon was defeated then the time of defending will be set. Not sure but i think so.

Yes you will. Looks like that all the time.

The time defended (at the bottom) does not update continuously. I've seen it update when another pokemon is added to the gym, and it always updates when you get kicked out. The time your pokemon has been in there is updated live, but the total at the bottom isn't.
