I know there are a number of different ways to learn the IV, level and specific stats of your pokemon but I wanted to know the best ways everyone has found to do it.
I am still plugging the CP and appraisal in a website.
If you want to be a nerd.
Hatch eggs, a lot of eggs. Raid, lots of raids: then
Ignore anything that is under top tier "amazing" and which does not have at least one top tier ability (max). Trash everything else
Then use the IV calculator.
Only spend dust on 95%
I trash anything with a 12 IV or lower on any ability unless super rare mongy
I use the following method to name IV
A=15
B=14
C=13
D=12
E=11
F=10
9=9
etc
so ABB = 15/14/14
or 9AC = 9/15/13
ow and 100 = 15/15/15
For iOS, PokeGenie - snap screenshots of best candidates as pointed out above, then open PokeGenie (pay a few $$ for the Pro version), and all the screenshots are automatically opened, scanned for PKM, analyzed and added to the database. You likely still need to enter some information, but it's just clicking boxes, super fast interface. Bonus, you can then calculate dust and candy cost for power ups, get %IV and %CP (previously really useful for Blissey), and get more information about attacks etc.
