How does SP/FB fare against Snorlax?

Focus Blast is one of the best moves to fight Snorlax with. Sucker Punch isn't too bad of a move. Whatever Pokemon you refer to probably will do decent versus Snorlax although still falls short to many of the hard-counters.

No problem. Shadow claw would be more ideal of course cause of stab, but sucker should work fine.

Well yes. The STAB applies to SC though. It ends up slightly more damage. Not a big difference though.
