I think defensive mons are not so relevant than earlier. When gyms have only 6 defenders, attackers can choose one pokemon to each defender. And all of defenders are easily countered by one attacker. So each gym is really easily destroyed no matter which mons it has. But to answer you question, maybe Blissey, Lax, Lapras, Steelix, Slowbro and Slowking.
For my 6, I'm gonna pick (from my squad, not in order):
* Slowbro (C/WP)
* Steelix (DT/C)
* Umbreon (S/DP)
* Lapras (FB/IB)
* Snorlax (ZH/HB)
* Blissey ZH/P)
I also have a 100% legacy Dewgong with the best defensive moveset (IS/IW) that I'm gonna max out.
While inferior to Lapras, it should still be decent. Looking forward to it.
People are forgetting Kingdra! With the new type effectiveness it'll be incredibly hard to attack effectively into. I think fairies are the only ones that have a positive matchup, and they generally have really low attack that makes them less than ideal. I think that'll put it above Slowbro/Slowking on defense, since Scizor exists, and maybe even above Lapras, because Magneton will be a much better counter to her.
But you can only defeat the gym when you have reduced the motivation of the whole family to zero. If any of them receives enough berries during your fight, it will stay alive.
It also did not matter in the past which one you put in, at least for trainers with good attackers. It's not that Dragonites, Rhydons and Gyarados (80% of most gyms) were hard to beat if you took into account their weaknesses.
