Trade Value of a Shiny Gary?

Rarity doesn't equal to trading value. You need to consider the demand as well.
For me, I would prefer a DB/DC Dragonite, or a B/SE Tyranitar, even with lower IVs.

When Niantic introduces trading and spoofers start RMTing mons shinies will be a lot more than viable battle mons.

For me, I would prefer a D9 DB/DC.

When trading starts I hope game press establish a different board for people to discuss trading.

Personally, I dont care if my gary is blue/red/black/white with blue eyes. I m not going to give my top pokemons for that

I would consider trading something like my 100iv Persian with bad moveset

A traded mon would have zero sentimental value to me while caught or hatched mons do. Thats one reason trading is irrelevant.

In theory, I think I'd be willing to part with a BS snorlax for it, but it would be one with IVs in the range of 36-42% and CP 1144. In reality, I'm not sure I want to trade anybody anything because it might detract from the game for me.

While I would trade high for a Red Gary, I would not want this particular one. I would want one I could show of in gyms with pride. But I could not place a Gyarados with Bite, as this Quick Attack is utterly unsuitable as a defensive move

It's still possible to obtain a shiny gyarados (without trading) but it no longer possible to obtain a legacy moveset (without trading). With that being said, despite its rarity status, I would trade neither a BS Snorlax or a DB/DC dragonite for a good iv gyarados
